Vegan Snack-A-Roons

Hi friends, today I wanted to share a fun, delicious, simple,  NO-BAKE recipe with you all. This recipe is filled with tasty and health-promoting goodies. These little balls are gluten free, dairy free, and vegan. Let’s get started!

For this recipe you will need:

{Makes 15-20} Ingredients for Balls:

  • 1/2 cup of almond flour
  • 1/2 cup of almond butter {I used the crunchy variety, you can substitute any nut butter you prefer}
  • 9 medjool dates
  • 1/4 cup of maca powder
  • 2 tablespoons of cacao powder
  • 1/2 teaspoon of cinnamon
  • 2 teaspoons of vanilla extract
  • 1/2 cup shredded coconut
  • 2 tablespoons of maple syrup or agave nectar {I used salted caramel maple syrup}

Ingredients for Topping:

  • 1/2 cup of powdered peanut butter
  • 1/2 cup of cacao nibs
  • 1/2 cup of shredded coconut

  1. Combine all ingredients in a food processor. Pulse until well incorporated. Consistency should be very similar to cookie dough. If needed, add a tablespoon of water.

2. Dough should take on this transformation:

3. Spoon out 1 tablespoon of dough and form into a ball shape.

4. Roll the balls around in your toppings of choice. If you are finding it difficult to get the cacao nibs or coconut to stick – try dunking  balls quickly in water before rolling.

4. That’s it, you’re done! Now you have a quick, easy, and semi-healthy snack. You also have the option to refrigerate for 1 hour before serving. TIP: Store in the refrigerator until ready to eat.
